Guide to truffle hunting in Croatia

How are truffles found and what makes them one of the most desirable luxury ingredients? Find out all about it.

There are two types of people — the ones who don’t particularly like truffles and the ones who adore them. Their intense aroma makes them appealing to some, and not so much to others. But, do people know what they’re eating when ordering a fancy truffle dish?

What is a truffle?

Simply put, a truffle is a type of a mushroom that grows underground. They’re generally used in Mediterranean dishes, as you can find them in countries such as Italy and Croatia. Truffles are often made into bases for pasta dishes and pizzas or used as a garnish for starters like french fries.

As they’re consumed in sauces or are grated, most people don’t see them in their original form and wonder “what do truffles look like?”. Although called “the diamonds of the kitchen”, they look nothing like it! One could describe them as rough-skinned potatoes with a spongy texture.

Why are truffles so expensive?

Okay, maybe they don’t look very elegant, but they sure are one of the fanciest ingredients one could put in a dish. The price of a single truffle (which is larger in size) can go up to 2,500 dollars! This probably has something to do with answering the crucial question — where do truffles grow?

Firstly, it’s important to say that trees and truffles form a symbiotic relationship, meaning they get nutrients from each other. It’s known that truffles typically grow near roots of oak and pine trees, but still, not a lot of people can say they know how to find truffles. As they’re deep underground, it takes a sensitive nose of an animal to get the task done. Previously, truffles were hunted by pigs, which are now replaced with specially trained truffle hunting dogs.
